Easy Winter Weeknight Meals

We’ve got busy schedules, days full of school, work and other responsibilities. There are easy ways to cut corners during busy nights, and dinner is certainly one of them. By preparing ahead of time, even planning grocery shopping, you can save yourself a ton of time and make sure you get a delicious and nutritious meal each night. For this week, we’ve got a sample meal plan you could try out! Feel free to try one of try all of them. Many ingredients can be switched out according to allergies or your personal preferences.

 

Monday: French Onion Chicken Nuggets from the Cookie Rookie. These little bites are made with Sun Chips and baked in the oven for a delicious twist on an old classic

 

Tuesday: Greek Style Shrimp Scampi from Lemons for Lulu. This is a simple pasta meal tossed with shrimp, tomatoes, olives and feta.

 

Wednesday: Reuben Hot Dogs from Girl Carnivore. We love this twist on an all-American favorite!

 

Thursday: Chinese Beef and Broccoli Soup from Barefeet in the Kitchen. This is the perfect cozy soup for chilly December nights.

 

Friday: Chicken, Broccoli and Sweet Potato Sheet Pan Dinner from Cooking Classy. The title might be kind of a tongue-twister, but the dish is sure to have your tummy happy! An easy one pan dish gives you plenty of time to relax in the evenings — and fewer dishes to do. Just a tip: give the sweet potatoes a head start in the oven before cooking!

 

Review all of these recipes at the beginning of the week, decide what ingredients you’ve already got, and what you need. Take the list with you to the grocery store and get everything in one trip!
